Spinach, Bacon, and Sweet Potato Salad From the Runner's World Cookbook



Yup, it's salad time!  When the weather is warm, there is nothing better than a big ol salad!  One of my favorite things about salads is that you can't mess them up! in actuality, I usually end up making my own salad recipes out of my head.  I don't really have a recipe, but they are just certain ingredients that I have found go well together. I should share some of them sometime, but for now, I'm going to share this recipe for Spinach, bacon, and sweet potato salad from the Runner's World cook book.  And like I said, you don't have to follow the recipe to the tee. Just use the same ingredients and you get the idea, right? Enjoy!

Double Vanilla French Toast From the Runner's World Cookbook

 
 
Even though yesterday I got up and made pancakes for us for breakfast, I don't usually make a "cooked" breakfast during the week.  Those are what weekends are for!   During the weekends we are more likely to experiment a bit more and try to make new things.  I like this recipe from the Runner's World Cookbook because it calls for ingredients that I normally would already have in my pantry/fridge.  I don't buy sourdough bread, so that would be an exception, but I'm sure you could substitute whatever bread you already have.

Coconut-Almond Energy Bars from Runner's World Cookbook

I wanted to start featuring more recipes from the Runner's World Cookbook and when I saw this one for the Coconut -Almond Energy bars I thought this might be a good one to make around Easter time. When I think of Easter goodies, I always think of Jelly beans, Peanut butter eggs, and stuff made with coconut!

And because I thought it was way easier to just copy the recipe right from the book, that's what I did. (Sorry about being lazy but we all need to find ways to save time right?)

Thirsty Thursday

I've been wanting to do a "Thirsty Thursday" post with some fun drinks for a while now, so I guess today is the day!

Even though the temperature is dropping in most areas, who says you still can't enjoy a frosty beverage or two ( maybe while sitting in front of the fire place)!

Here are some fun Pinterest Finds ( cause who doesn't LOVE Pinterest)?

In the original post, these milkshakes where made for Valentines day, but change out the heart shape sprinkles for Christmassy ones and now it is a Christmas drink!  This recipe from Pizzazzerie can be found HERE.


Why not skip the pumpkin pie by next Thursday and make these pumpkin shakes instead (or just have both)!  This recipe from Mom On Time Out can be found HERE



The ever so yummy Blueberry Oatmeal Smoothie.  If you haven't seen this one yet from the Runner's World cookbook, you're really missing out. So simple to make and it's healthy too. Win-Win! You can find that recipe HERE.

A Day of Running Activities at the Runner's World Blogger Event

We were up bright and early on Friday morning and headed to the visitors center at the historic Bethlehem Steel Stacks.   This day was SO busy, but I want to at least briefly mention each activity we did.

First we met "Running on Air" author Budd Coates. Budd has been running marathons for over 5 decades and has been completing them in under 3 hours! Isn't that amazing?  He did a brief breathing demonstration for us ( which I will talk about later) before we went out on our 3 mile shake out run with him and Bart.

Then we prepare for our 3 mile run.
It was a bit chilly when we started but quickly warmed up. I stayed comfortable in my black compression capris and long sleeve tech shirt. ( photo on left courtesy of Linda of Running4two)

Since the roads were still open, we all had to run along the pedestrian path as we crossed the bridge. It was a little tight, especially when there were runners (not from our group) speeding by us going the opposite direction.

When we got to the top of the hill, we stopped at an overlook and Bart told us some history about the Lehigh Valley!  Then we had to get a group shot.

The 3 miles that we ran was pretty much the same course that the 5K runners would follow the next day. It was pretty easy and really only had one incline that wasn't so bad.

When we arrived back at the Steel Stacks complex, it was time for the Running Skirt's Olympics.
Now I know why everyone loves Running Skirts! Not only are their products great, but Cindy, the head of Running Skirts is Super Sweet!  We had a race were we had to run back and forth putting on running skirt products. Even Bart participated! Running Skirts put together a quick video of the event!  Click here to watch it.

Next was Breakfast and a shoe demonstration from the great people at Altra.

As you can see, I am debating between two different pair of shoes. Golden Harper, founder of Altra Drop Zero shoes, explains the difference between each pair.  I ultimately ended up with the Pink and black shoes that I am wearing on my right. ( this photo courtesy of @janetober)  After the shoe demonstration, we headed outside for a running demonstration also presented by Golden.
 
Next, we headed back over to the visitors center where the great people from Icon Health and Fitness did a "Recovery for Runner's" Presentation.
We were each presented with a yoga bag full of products. Our instructor Melanie showed us how to use each of these products properly after our runs!
 
I think by the time this session was over, we were all ready for lunch!
Everything on the lunch buffet was from the new Runner's World Cookbook: Caprese Farro Salad, Simple Green Salad ( with either mustard and cumin dressing or nutty olive oil dressing) Mushroom Tacos ( that were gluten free), Spicy Fish Tacos with Pineapple Slaw, and for dessert Banana Oat Energy Bars.  I'm not a big seafood eater, so this was the first time I've ever had fish tacos. I have to say they were not bad. The pineapple slaw was an nice addition to the taco. The banana oat bars were very yummy too! While we ate, we were introduced to the editor of the cookbook and one of the chefs who came up with some of the recipes.
 
 
As if we hadn't had enough fun already, after lunch we got to meet Olympian Summer Sanders!
 
Summer is a great speaker! I could have listened to her stories for hours. She talked about how she became interested in swimming and how her career had grown. She talked a bit about her children and the sports they are involved in as well.  We got some time to talk to Summer one on one and I showed her the picture of her and Lacey( which I still had on my phone) at the Runner's World event at the Boston Marathon this year, and after looking at it for a moment, her faced lit up and she said she remembered (I truly think she was being honest too because she told me right where that picture was taken).  Summer ran the 5k with her family on Saturday and then the half on Sunday.

The last thing on the agenda today ( before picking up our race bibs) was the Pro-Form and IFit demonstration.
These treadmills are super cool! The ones they had on display where the new Boston marathon treadmills, but they make other brands that are iFIT compatible (ex: Nordick Track, Gold's Gym, ). I can't wait to share with you more about a really cool app I experienced here at this demonstration!  After the demonstration we each received a really cool Nike Running tech shirt from iFIT.

Now it was finally time to go to the expo and pick up our race bibs/shirts/etc!

Runner's World Headquarters Take 2: The Blogger Event

I am so excited to announce that I was invited ( along with a select number of other bloggers) to attend the Runner's World Blogger event this weekend at the Runner's World Headquarters!  I am leaving today( Thursday) and Runner's World has a jam packed schedule for us as soon as we all arrive. 

 Thursday:
We will be meeting at the Marriot ( where we will be staying for the weekend) and then we will be shuttled to the Runner's World Head Quarters for a meet and greet. I will get to take another tour of the head quarters and then RW will be hosting a barbecue!

Friday:
On Friday we will be starting our day very early. We need to be on the blogger bus at 7:15!  We will be meeting with running author Budd Coates and will be seeing demonstrations. After that we get to do a shake-out run with Bart Yasso and then finally have some breakfast!

After breakfast, more demonstrations, which I won't give too much info about now, but I am really excited about them!

And then what we all wait for, LUNCH!  I can honestly say I am really looking forward to this part, not just because I like to eat, but because everything on our lunch menu is coming from the Runner's World Cookbook!
 Even on the itinerary I was given it tells me what the meal will be and what page of the cookbook I can find it on. Very cool.  I can't wait to try the Caprese Farro Salad pg 82-83.  If you haven't already read my post on the Runner's World Cookbook, you can check it out here.

After lunch we have a meet and greet with Olympic gold medalist Summer Sanders, another demonstration, and then it's off to the expo!
This is Lacey and Summer at the Boston Marathon expo this year. Friday I will get my chance to meet her too!

It's Here, The Runner's World Cookbook!

Earlier this month I was sent the new Runner's World Cookbook to review!
Having taught several Food and Nutrition classes, this was right down my alley and I couldn't wait to take a look at this book!  I admit, I am one that DOES judge a book by it's cover, and this one did not disappoint.  I love that this is a very sturdy hardcover book. Even with modern conveniences and the ever so popular Pinterest, I still use cookbooks, and I use them hard! So I was happy to see that this one will be able to withstand my use!

Another thing I will admit about cookbooks is that if it doesn't have a picture of the final product, then I probably won't attempt to make that recipe. I like pictures!  This book had a good balance of content and pictures. I love how colorful it is!

This book is actually more than a cookbook. It's a resource for runner's and anyone who wants to adapt to a healthy eating style. It is prefaced by what it means to eat like a runners and how to eat like a runner. There is a guide on how to buy bread and pasta, using the right oils, and how to pick the best seafood. If you like pancakes, you'll love the section on pancake batter and topping ideas! There are over 50 unique pancake flavors including Hawaiian, Pancake S'more, Cafe' Hotcakes, and Caramel Apple just to name a few!

This cookbook is very easy to use too. At the top of every recipe is a color coded tab. This tab will tell you if the recipe is for Pre-run or Recovery.  Other tabs will tell you if it is gluten free, low calorie, vegan,  or vegetarian. There are also recipes that are labeled as fast, which can be prepared in 30 minutes or less.

There are so many fun features about this cookbook that I could write about it for a long time, but instead I will save it for a future post.  For now, I will share some of the recipes I have made.


                                                                 Thai Avocado Soup
2 ripe avocados, 1/2 English Cucumber, 1 3/4 cup fat free plain yogurt, juice of 1/2  a lime,  3 tablespoons of cilantro, 1/2 teaspoon of chili paste or Tabasco sauce, 1/2 teaspoon of lemongrass ( optional).  Blend all ingredients in blender and then let chill for 2 hours before serving.

( This is labeled as a vegetarian and low calorie recipe)

                                                           Blueberry Oatmeal Smoothie
1 cup of fat free milk, 1/2 cup unsweetened frozen blueberries, 1/2 cup fat free plain Greek yogurt, 1/4 cup old fashioned rolled oats, 1 tablespoon ground flaxseed.  Blend in blender until smooth.
 
(This is considered a Recovery recipe, perfect for after a run!  It is also, Gluten Free, Vegetarian, Low Calorie and fast)
