I wanted to start featuring more recipes from the Runner's World Cookbook and when I saw this one for the Coconut -Almond Energy bars I thought this might be a good one to make around Easter time. When I think of Easter goodies, I always think of Jelly beans, Peanut butter eggs, and stuff made with coconut!
And because I thought it was way easier to just copy the recipe right from the book, that's what I did. (Sorry about being lazy but we all need to find ways to save time right?)

DeleteThese sound amazing!! Even though I don't eat it, I always think of ham around Easter. And also lamb cake (cake in the shape of a lamb) and lamb butter.

DeleteI'll second Rachel's vote on ham. I don't normally eat it but I know ham is big around Easter. I also think of all the Easter candy at the grocery stores and how this is the last push of candy since Christmas. Christmas candy, Valentine's Day candy and then Easter candy.
