Hula Pizza recipe from Biggest Loser

      Gourmet Hula Pizza

Thought I would share a recipe for today's post.  This was a much loved recipe from my Nutrition

Class.  The Original source of the recipe was one of our Biggest Loser cookbooks (Love those cookbooks).  I adapted it a bit. I believe the original recipe called for goat cheese, but I changed it to mozzarella so it would please more pallets!

The best part is that you can eat the entire pizza and it is only considered one serving!  Dietary information is at the end of the recipe.

P.S  we've also added chopped grilled chicken to this recipe as well for added protein.  ( the chicken is not included in the nutritional information)

Gourmet Hula Pizza adapted from the Biggest Loser Cookbook


1 whole wheat flour tortilla

2 tablespoons barbecue sauce
( sauce should have 7grams of carbs or less per 2 tablespoons)

 3  tablespoons of goat cheese crumbles or low fat mozzarell ( made with skim milk)

3 tablespoons diced pineapple


1 tablespoon or more to taste of finely chopped cilantro

 

·        Preheat oven to 400 degrees F.

·        Place the tortilla on non stick baking sheet.  Bake 2-4 minutes per side.  If air bubbles form while baking, poke them with a fork. Use spatula to carefully press the air out.

·        Remove from oven and top evenly with sauce, chicken, pineapple, cheese, and cilantro.  Bake pizza 2-4 minutes longer or until cheese is melted. Slice into wedges and serve.


This pizza is one serving:  Approx: 217 calories, 7 g protein, 35g carbohydrates, 7g fat, 10 mg cholesterol, 2 g  fiber
