Lemon Blend Pie

I have been doing a lot of baking this summer. It seems that baking and hiking has been what has been taking up most of my time this summer. Which I am grateful for the hiking because what I've been baking have been mostly desserts!



This week I am sharing another yummy pie!
My Key Lime Pie was such a big hit with my family, that I decided to make a Lemon Pie!
It's called Lemon Blend Pie because it is made in the blender!  I happen to use the Vitamix.


Ingredients needed.
1. Pie Crust- For this pie I used a pre-made pie crust but I docked the crust which means poking holes in it with a fork. This allows steam to escape during baking so it doesn't bubble up. 

2. I used one and a half lemons. The other half I used for garnish.

3. 4 eggs

4. 1/2 cup butter

5. 1 and 1/2 cup of sugar

6. Teaspoon of vanilla


Cut the lemons in chunks (keep the peels on) and remove the seeds.  Toss into the blender with all the other ingredients and blend on high speed!  Easy peasy, right?


Pour the pie mixture into the the pie crust. Bake in oven at 350 for 40 minutes!


After the pie has cooled you can add either cool whip or  your own whipped topping. I made a home made whip topping with  1 cup of  heavy whipping cream and 2 tablespoons of  sugar.  Beat with a hand mixer until peaks form.  I put the cream in a pastry bag and piped it on.


                           I used some of the other half of that lemon for decoration on the top.


I topped this slice with a blackberry. Doesn't it look yummy?  It really was and SO easy to make. You should try it. I wonder if I can use this same blender method to make my next Key lime pie?

  4. Wow! That looks so delicious and easy! I wonder if it would be good with a Graham cracker crust too. I love citrus recipes where you can just throw the whole thing in the blender. For some reason, it's satisfying to use the WHOLE lemon. Thanks for sharing.
