Monthly Meal Ideas -First Edition

 

In a previous blog post I talked about bringing back the WIAW ( What I ate Wednesday) posts but because we don't blog on Wednesday, I thought perhaps I would just do some random posts every now and then sharing what I ate during the month.  

I actually like seeing what other people eat because it gives me ideas on what to make. I really do love to cook and experiment with different recipes and I think getting ideas from others is a great way to mix things up.  Please understand that these pictures were not taken with the intention of sharing them on the blog, so they are just quick snap shots.  I will try to work on my food photography skills from here on out!



Spaghetti and meatballs quickly turned into Penne Pasta when I realized I didn't have enough spaghetti to make a pot.



A mint chocolate chip Whoopie pie from a local bakery. It was a St. Patrick's Day treat.


My home made Chinese chicken and broccoli. You can get the recipe HERE.


Corkscrew pasta and chicken.  I love to make pasta but I know I need to cut back on that. In the summer time I tend to make Zoodles and Spaghetti Squash instead.


Tried these chicken fingers in the air fryer for the first time. The potatoes were some that I prepared and froze ahead of time. I roasted them with French onion seasoning.


Half homemade beef stroganoff. I know this picture probably doesn't look appealing but the meal itself wasn't bad. 


This was a potato casserole that I made for the first time for a weekend brunch. It was a layer of tater tots mixed with eggs, cheese, and bacon. It was super yummy!


I found a recipe on a blog for salsa chicken in the crock pot. I left chicken and salsa in a crock pot while I was at work.  it was pull apart ready when I came home. We had it over rice with lettuce, tomato and avocado. 


One of my favorite quick meals is a sheet pan meal of chicken sausage and roasted veggies. I then put it over a bowl of Quinoa. 


Lunch at work is often a salad with a pouch of those flavored tunas.


I saw someone on Instagram post about a Big Mac Salad. I was intrigued so I made it the next day.  I can honestly say that I've never had Thousand Island dressing on a salad before. With all the burger ingredients and the pickles, this really did taste like a Big Mac.


I had to try making banana bread. This was actually Hawaiian banana bread and it came out perfect!


One night we ordered pizza from our favorite pizza place.

Funny story about this work lunch. This taco salad came with a bag of Tostitos.  When I bought it the bag was contained inside the plastic container with the salad.  When I pulled the bag out it was very light weight and I could tell there was nothing in it. The bag was sealed closed, yet there were NO Tostito chips in it. Poor quality control at the Tostitos factory....lol!

  1. I'm in desperate need for some food ideas. I feel like we have the same thing over & over.
    I need to start incorporating more veggies - that's for sure!

    1. I've been wanting to keep a list of what I make and rotate it out every several weeks so we are not eating the same thing, although it doesn't bother us to eat the same thing if we like it...lol

  2. YES!!! I love seeing what other people eat. I recently had to do the "oops we're out of spaghetti so we're doing penne" swap. I've seen the Big Mac salad before but never wanted to try it until now. And grrr on the "diet" bag of Tostitos.

  3. Looks like you had a nice variety of meals over the month! This is such a weird time of year for meal planning--we go from grilling one day to casseroles another, lol. And hilarious about the empty bag of tostitos!
