Tasty Tuesday: Benefits of the Egg and Veggie Quesodilla


I've never been a huge fan of eggs, but lately as I am reading more blogs and pinning more Pinterest recipes, I've come to realize there are a lot of different and more exciting ways to make eggs.

It seems like you can through some eggs in a pan with whatever you have in your fridge and call it a "scramble".  So that's what I've tried.


1. I used about 3 eggs ( yes I used the whites and the yolks)

2. I added some fresh spinach leaves I chopped up. I was glad to use the spinach up as it often wilts before I can use it all.

3. I added some fresh tomatoes and some shredded cheese.



ok, so looks like my "scramble" quickly turned into an omelette. And then because I always think omelettes are a little messy to eat, I've cut it into piece.


                                                  And now the Veggie Quesodilla is born!

And just in case you are a little skeptical of keeping the egg yolks in this recipe, here are a few reasons why egg yolks can be nutritious.

1.Egg yolks actually contain MORE vitamins than egg whites. Vitamins A,D, E, and K are found only in egg yolks and not in egg whites. 

2. Although both egg whites and egg yolks contain minerals that are essential for carrying out body functions like balancing electrolytes, the yolks actually contain MORE. 93% of calcium from an egg is found in the yolk.

3.  The Carotenoids in egg yolk are also good for your eyes. The Carotenoids are what give egg yolks their yellow color. They lower the risk of age-related macular degeneration and cataracts. They also protect the eyes from free radicals that can negatively effect different parts of the retina.

4. Egg Yolks also help promote heart and cardiovascular health.


But just in case you decide to forego the egg yolks, did you know that you can buy a whole container of just egg whites?

The first time I ever saw this I was amazed. I knew egg whites existed in smaller container form that you get at your local grocery store, but I had no idea that people order them by the gallons. I've read some health blogs where people buy these by the gallons and they even have a pump for on the top of the container!

  1. I totally need that gigantic jar of egg whites! I love egg white omelets. I scramble them with whatever vegetables I have available. I'm excited to say I have a recipe for today. I haven't done a food post on my blog yet, so I'm glad you are hosting this link up. It motivated me to do something different!

  2. Sounds good! I like cooking eggs (yes, the yolk, too!) and whatever I have in the kitchen to add to it - especially avocado.

  3. That omelet looks so pretty and delicious! I always eat the egg whites and yolks. I had no idea you could buy purely egg whites in a container that large though - wow!

  5. Gallon jugs of eggs? Wowwwwww. I enjoy eggs a lot. I used to be scared of the yolks, but no more! My standard is either 2 whole eggs or 1 whole egg and 2 egg whites. I load it with salt and put it in a wrap. Yummmm!

  6. I cook the whole egg, but I only make scrambled eggs. I'll get omelettes at restaurants, but whatever eggs I set out to make myself always end up scrambed.

  7. I wish I had one of those tasty quesadillas sitting in front of me right now. Guess I need to make my breakfast! I had no idea that egg whites could be bought in such a huge quantity!

  8. Yeah, I always use the whole egg too (unless I'm making something that just calls for part of the egg like a meringue but that's rare). I love making frittatas since it makes the eggs seem fancier and I can use them for lunch or dinner even. I sautee whatever veggies I have on hand, then pour the beaten eggs on top and let it cook a while (maybe 5 minutes?). Then I sprinkle with cheese and put the pan in the oven to let the frittata finish cooking (maybe 15 minutes at 400 degrees). It comes out puffy and golden. I cut into wedges to serve and usually add a simple salad to go with it.

    1. I have always wanted to do this but my biggest concern (believe it or not) is the type of pan I use. I don't ever know if the pan is able to go straight from the stove to the oven!

    2. Like egg beaters? Nope. And those weird powdery things with corn starch in them, nope :( I gotta use the "flax-egg" if I need a binder in recipes!

  10. I love eggs so much! I eat them almost every single day, I love them in a scramble or hard-boiled! I have never seen a container that big before! Ha

  11. I knew you could buy eggwhites in small cans, but I had no idea you could buy this in bulk. That's pretty awesome! Oddly, I am helping my dad with an easter church breakfast, and we were planning on doing eggs as part of it, I need to look into finding that around here, that would be so much better and can I just say it would mean a lot less time for me cracking eggs ahead of time!
