What's on my menu....

Normally since I am always on the go for work I don't have home cooked meals while I am working. It is usually whatever I packed in my cooler. But this week  of course the weather played a part in our schedule so I did have some sit down meals.




On Wednesday I had this salad at a local restaurant in Cincinnati.  It may have been a chain ( I just never heard of it and don't remember what it was). This salad had marinated artichokes on it.  That's something I never had on a salad but somehow it worked. It came with a tasty crosscient roll with a glaze on it.  I had to splurge with blue cheese dressing on the side.


 
That night we got stuck in Norfolk Virginia.  I called one of my friend's that lived there to see if they wanted to meet at IHOP for breakfast the next morning. Egg scrambler with avocado, cheese, and salsa with hash browns. It came with a side of pancakes. I had never seen this as an option here. I wonder if it's new or a limited time?

On my one day off this week I went to the store to make several meals so I didn't have to subject myself to airport food during my next trip.


I made homemade broccoli cheddar soup when I got home. There was plenty of extra so the rest got put it the freezer for later in the week.


 
                                         That evening for my snack I made guacamole. 


 
The next day for lunch I made this pizza. Can you believe it was only $4.50? I ate a few pieces then wrapped the rest up for work the next day. 


 
For dinner it was pasta with veggies in a creamy tomato sauce. I made extra to make sure I had some to pack for work.

This week I made sure I wasn't going to spend money on expensive airport food or eat another peanut butter and jelly sandwich out of my bag.

  1. I don't know how you do it, eating out of a lunch bag for multiple meals a day, or having to eat airport food. But I'm glad you were able to enjoy some home cooked meals this past week.

  2. Eating out multiple times in a week is tough! It's hard to keep control of portion size. We really try to eat most of our meals at home. And I pack my lunch for work.

    1. Portion size is the worse for me. I think a whole bag is one serving. ..haha.

  3. It must be very hard planning food with your work schedule. When I travel, I always carry my breakfast which is usually a banana and a muffin since my flight is always first thing. It I take a flight near lunchtime, I either pack a sandwich or bring a meal from a local healthy restaurant that makes really tasty bowl's with all kinds of things that you can choose. Nice work keeping your food healthy this week L!

    1. I try to eat as healthy as I can. That's why I do pack. It is also cheaper. It gets so expensive eating every meal out.

  4. I always try to eat healthy, but when I'm in an airport, that isn't always feasible. I ate Whataburger before my flight to Orlando last week and it was only OK. I let my splurge every once in a while, but I don't like it that there aren't many choices.

    1. I always feel like I am splurging when I am at work if I dont pack. On my days off I make up for it though.

  5. You were in Cincinnati? that's about an hour & a half away from me :)

    I need to get to ihop NOW - those eggs with the avocado looks AMAZING!!!

  6. It must be rough planning around your schedule! Busy busy busy! But man that iHop meal looks to die for...diner food is the best. A big plate of hash browns could solve world wars.

    1. Yes I love IHOP. We don't have any close to where I live so I always try to go to one while I'm on the road.

  7. Impressive meal prep. That sounds so hard to eat on the go all the time like that. I travel relatively infrequently so I end up eating out or airport food when I travel. I love artichoke hearts on salads!

  8. I'm really impressed that you pack meals for your work - that seems extra difficult to me, considering you have to go through security and all. Everything looked great!

  9. I would imagine that its really difficult for you to make home cooked meals with traveling all the time! I think I would get sick of airport food really quickly. When i travel I always bring alot of my own snacks and try to avoid having to eat meals by eating right before I leave.

  10. All your meals look great. I bet taking it all through security and such is a pain. I almost always bring my own breakfast/lunch to work, its just easier for me. When I travel for work,I always try and pack healthy snacks so I don't buy airport food!

  11. When I used to fly a lot, I ate horribly. I would always try to eat better, but not every single airport has the healthiest of options, and for me it wasn't really possible to bring food along. If I am able to take up traveling a lot again later this year, I am really going to have to take a better approach at eating on the go!
    However, I must say, you're a much better cook than me, that pizza looks fabulous! I can make a good pizza, but mine never turn out that pretty:)

  12. Usually when I'm on the run, my diet suffers unfortunately. It becomes more about convenience than anything else, which is unfortunate, so I love when quick serve restaurants offer healthy options and sides to help me out in a pinch!

  14. I take my lunch everyday for work- if I am out doing facility visits it gets tricky because it has to sit in the Vera Bradley lunch box for hours- I haven't got sick yet- so I must be doing something right!

    1. I think the the same thing. I have an ice pack that I never refill throughout the day and still eat the food in there later on. My immune system must be great! Or I am just so used to it....haha

  17. I love making my own guacamole -yum. I don't eat out much during the week but on weekends our family usually eats out. I like to make a few soups/stews/salads to last me a few days and eat them all week. I am really picky!
