Summer Gazpacho



My sister and I have been using the Vitamix lately to make some yummy Summer Soups!
The first one we decided to make is a Gazpacho. 



Gazpacho is a chilled soup of blended vegetables.  It was so simple to make .


I had just gone to our local Farmer's market that afternoon, so I already had all the ingredients.

This is what we used:


4 large tomatoes
1 cucumber
1/2  green pepper
1/2 red pepper
1 Jalapeno pepper ( ribs and seeds removed)
2 cloves of  Garlic
1/4 cup red onion
1 tbsp Soy Sauce
2 tbsp Olive Oil
2 tsp Balsamic Vinegar
1 tsp of sea salt and a dash of pepper 

1/4 cup of cilantro



 A few pulses in the  Vitamix  and our soup was made.  Like any "chilled" soup, you'll want to put it in the fridge to chill for 2 hours.  Easy peasy!

We garnished with croutons and cilantro.  We made this on a really hot day and it was quite refreshing!

  1. Ooooh, all of my favorite ingredients! Gotta say, I've never tried chilled soups, though...maybe this will be the summer to do so ;-)

  4. We're in the midst of a heatwave, so chilled soup sounds good right now! I am on my second Vitamix after like 15 years. Love Vitamixes!

  5. I love Gazpacho. I used to make it often but haven't in years.

    I don't own a Vitamix but the blender works fine for me when I do make soups.

  6. I love gazpacho but I always forget to make it. I like how you peeled and seeded the cucumber before you added it to the soup. That is appealing. This looks like a very yummy recipe for when the tomatoes are ripe. should be soon!

  7. I'm not a fan of really "hot" stuff. But if someone wants that "heat" they could keep the ribs and seeds in!
