This is my last of the summer pie recipes, Banana Cream Pie.
I've been buying a lot of bananas this summer because they make a great treat for the puppies. I usually cut them up, freeze them, and then put them in the food processor to make banana ice cream. I add some peanut butter to that and Sybie and Willow go crazy!
So since I had so many bananas, I thought I would try making a banana cream pie. I've never made a banana cream one before so I was really surprised at how well it turned out.
I opted to use a pre-made pie crust and docked the crust ( poked holes in it with with fork), and then baked it according to the packaged directions.
For the filling, I made a home made pudding.
In a sauce pan combine:
1 cup white sugar
2 tablespoons corn starch
3 cups half and half
1 tablespoon vanilla
Cook on stove top until mixture becomes thick and bubbles ( about 5-10 minutes).
In a separate mixing bowl, add 4 egg yolks. Then slowly add one cup of the pudding mixture that is bubbling on the stove. Wisk rapidly as you pour the mixture into the egg yolks.
Then pour this egg mixture back into the pudding mixture that is on the stove. Continue stirring until it boils, then reduce heat to low but continue to stir until mixture is thick ( about 3 -5 minutes)
Once mixture is thick, remove from heat and stir in 1 tablespoon of butter.
After the crust is baked and cooled, fill it with sliced bananas. It will take about 2 or 3 bananas to fill the pie crust depending on how large the bananas are.
Pour the pudding mixture over top of the bananas in the pie crust.
Wrap with plastic wrap and put in fridge to set for at least an hour.
Add whipped cream ( I used already made Cool Whip). Enjoy!

P.S If you use the new Blogger, what size font are you using. mine is set to Normal, size Large, but it still looks as small as it was when it was set to medium. Any suggestions?

DeleteIt's been forever since I've had banana pie! My son and I did a zoom cooking class w Magnolia bakery and made their famous banana pudding last week. Similar but they layer in some Nilla wafers.
