There are a lot of different Key lime pie recipes floating around out there. Some are baked, some are no bake, some use cream cheese, some use sour cream, some use heavy whipping cream, some use eggs. I decided after experimenting, I would create my own recipe. Here is how I made it.
Make a Graham Cracker Crust.
About 2 cups of finely crushed graham crackers.( I threw mine into the food processor).
1/3 Cup of white sugar
6 Tablespoons of melted butter
Mix all ingredients together and then press into pie pan ( use an 8 or 9 inch pie pan).
Bake at 375 for 7 minutes.
Pie Filling
2 blocks of cream cheese
2 tablespoons of sour cream
2 tablespoons of powdered sugar
1 can (14 oz) Sweetened condensed milk
The zest and juice of 3 limes ( I used regular limes. If you use small key limes you may need more) I actually started out with 5 limes but did not use all of them for juice. The others were used for garnish.
Blend all ingredients in stand mixer ( or use hand mixer) until creamy.
Pour filling into baked pie shell. Put in freezer to "set" for an hour and then transfer to refrigerator for 2 hours more.
The pie ends up being creamy but a thick consistency. I'm pretty proud of this recipe as it turned out quite yummy!
I actually had some leftover pie filling so I was able to make 4 of these key lime cups. I layered them with graham cracker crumbs and key lime pie filling. These were quite yummy as well.

DeleteLooks delish! My husband is really fond of key lime pie, although let's just say his eating habits are not the best, so I rather he'd get it when we eat out (which we don't now, LOL!) than having a whole pie at home. I like it -- but of course you know I'd rather have chocolate. :)

DeleteWow! I can't even imagine coming up with my own recipe for key lime pie. This looks delicious and so refreshing. Key lime is my hubby's favorite. I must try it.
ReplyDeleteI was actually impressed that it came out so good. I think you could probably eliminate the sour cream since I only used 2 tablespoons, but then again maybe that is just what it needed!
