Looking Forward: Boston to Big Sur Challenge
A Time to Look Forward
My sympathies go out to all those that were effected in the tragedy that came during the Boston Marathon last Monday. At least after hearing the news this weekend we can all breathe a sense of relief and bring some closure to the outcome.

Boston Marathon Weekend
My Weekend in Boston Before the Race:
I arrived at Boston Logan
International after a long morning of flights. I arrived at 1pm and very
anxious to get to the hotel to drop luggage off and head to the expo. I hopped
into a cab and said “to the Westin Copley”. The cab driver was driving like a
maniac in all the traffic that afternoon, but I wasn't complaining. All the
sooner I would arrive at my final destination.
Good Luck in Boston!
We are all excited for the big day tomorrow.
Lacey is currently in Boston getting ready for the Boston Marathon. We are all so excited for her. What an accomplishment this will be!
Hula Pizza recipe from Biggest Loser
Class. The Original source of the recipe was one of our Biggest Loser cookbooks (Love those cookbooks). I adapted it a bit. I believe the original recipe called for goat cheese, but I changed it to mozzarella so it would please more pallets!
The best part is that you can eat the entire pizza and it is only considered one serving! Dietary information is at the end of the recipe.
If you make this recipe, let me know how it turned out.
Enjoy!
1 whole wheat flour tortilla
2 tablespoons barbecue sauce
( sauce should have 7grams of carbs or less per 2 tablespoons)
3 tablespoons of goat cheese crumbles or low fat mozzarell ( made with skim milk)
3 tablespoons diced pineapple
1 tablespoon or more to taste of finely chopped cilantro
·
Preheat oven to 400 degrees F.
·
Place the tortilla on non stick baking sheet. Bake 2-4 minutes per side. If air bubbles form while baking, poke them
with a fork. Use spatula to carefully press the air out.
·
Remove from oven and top evenly with sauce, chicken,
pineapple, cheese, and cilantro. Bake
pizza 2-4 minutes longer or until cheese is melted. Slice into wedges and
serve.
This pizza is one serving: Approx: 217 calories, 7 g protein, 35g
carbohydrates, 7g fat, 10 mg cholesterol, 2 g
